Crispy Baked Fajita Chicken Tenders

If you’re craving something crispy, flavorful, and totally delicious, these Crispy Baked Fajita Chicken Tenders are about to become your new obsession! Coated in a crunchy, grain-free chip crust and loaded with flavor, these tenders are super tasty and incredibly easy to make, perfect for a quick weeknight dinner or even meal prep.

What makes these tenders so good?

The chicken! I used Grassroots Co-op regenerative meat for this recipe, and let me tell you, these tenders are extra-flavorful, nutrient-packed, and incredibly juicy. Their chicken is pasture-raised and regenerative, which means it’s good for you and the environment. The quality is far beyond any grocery store chicken I’ve tried. You can taste the difference in every bite, freshness and quality like this is truly hard to beat!

And let’s talk about texture, these tenders are baked, not fried, so they’re light yet crunchy on the outside and perfectly juicy on the inside. They have the ideal crispy outer layer with a tender, juicy center that makes them instantly a favorite!

Ingredients You’ll Need:
  • 8 oz Grassroots chicken tenders
  • 1.5 oz grain-free tortilla chips (I used Siete)
  • 1/4 cup almond flour
  • 1/8 cup arrowroot starch
  • 2 tbsp fajita seasoning (I made my own from scratch, but feel free to customize!)
  • 2 tsp sea salt
  • 1/8 cup melted coconut oil (for dipping before “breading”)
  • Avocado oil spray
  • Primal Kitchen buffalo sauce (for dipping)

Directions:

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a food processor, pulse the grain-free tortilla chips until they’re crumbled into fine pieces.
  3. Set up a breading station with three bowls:
    • Bowl 1: Combine almond flour, arrowroot starch, 1 tsp fajita seasoning, and 1 tsp sea salt.
    • Bowl 2: Add melted coconut oil for dipping.
    • Bowl 3: Add the crumbled tortilla chips with the remaining 1 tsp fajita seasoning.
  4. Coat each chicken tender as follows:
    • Dip in the flour mixture.
    • Coat in melted coconut oil.
    • Cover with the chip seasoning mixture.
  5. Place the coated tenders on the lined sheet and spray with avocado oil.
  6. Bake for 20 minutes until lightly crispy, then switch to broil for 1-2 minutes, watching closely to avoid burning.
  7. Let the tenders cool for a few minutes, then dip in your favorite Primal Kitchen buffalo sauce and enjoy!

Why You’ll Love These Tenders:

These chicken tenders bring all the crispy satisfaction of fried chicken, but with a cleaner, healthier twist! The grain-free chip and almond flour coating keeps them gluten-free, anti-inflammatory, and packed with flavor. Inside, the juicy, pasture-raised chicken offers not only amazing taste but also the benefits of nutrient-rich, regenerative farming. I love them with a spicy buffalo dip. it’s hard to believe something this delicious is actually good for you!

Customize the fajita seasoning to fit your flavor vibe! Whether you’re making these for a quick dinner or prepping for the week, these tenders are sure to be a staple in your recipe rotation.

Enjoy this healthy, flavorful twist on a classic, and let me know in the comments if you give them a try!
